Datasheet for Collio Sauvignon Ronco delle Mele 2023 Venica & Venica:
Grape Variety:
100% Sauvignon.
Harvest:
Grapes harvested by hand and destemmed between September 3 and 22, 2021.
Vinification | Refinement:
After harvesting, the grapes are macerated for about 20 hours at a temperature of 11°/12° C in special containers, protected and from oxygen with innovative systems by recycling their own fermentation carbonic in order to reduce the intake of antioxidants. The must ferments and ages on the lees for 5 months partly in large 20/27 HL wooden barrels and partly in steel containers.
Bottling:
The wine is then blended and bottled at full moons between March and June 2022.
Recommended pairings:
The list of dishes that this Sauvignon Collio perfectly accompanies could be endless: truffle eggs, porcini crespelle, lobster ravioli, grilled shrimp, asparagus and seafood risotto. Endless crustaceans… a shrimp and orange-scented risotto, a leek and bear garlic velouté or an herb-scented omelette.
Serving temperature: 12-13°C.
Aging potential: more than 10 years.
Alcohol in vol. %: 13,50%.
