Data sheet of the 2013 Berlucchi Franciacorta Riserva Palazzo Lana Extrême:

GRAPES:
100% Pinot Noir, sourced from two estate vineyards, trained at high planting density, in Borgonato: Quindicipiò, on the hillside, and Brolo, overlooking Palazzo Lana Berlucchi. HARVEST TIME: third decade of August and first of September 2013. YIELD: 9,000 kg of grapes per hectare, with a must yield of 25 percent equivalent to 3,000 bottles per hectare. VINIFICATION:
the “heart” of the flower must, obtained from the soft and progressive pressing, carries out the alcoholic fermentation in steel vats; at the end, some batches are transferred to oak barrels, where they age for 6 months in contact with yeasts. MATURATION:
preparation of the cuvée in the spring following the harvest, with 100 percent of wines of the vintage chosen from the best selections. Second fermentation in the bottle and subsequent aging in contact with the yeasts for at least 9 years, followed by a minimum of 11 months after disgorgement.
DOSAGE:
Extra Brut.
FORMATS:
bottle 750 ml and Magnum 1.5 l.
PAIRINGS:
is a Riserva with excellent body, which pairs nicely with dishes rich in structure and flavor. It can accompany important first courses, fish stews and meat main courses.
SERVING TEMPERATURE:
10-12 °C.
