Cave des Onze Communes is the largest wine cooperative in the Aosta Valley. With the new Fumin Les Chevaliers, made with the advice of Beppe Caviola, the quality breakthrough is assured.

With the arrival at the largest cooperative in the Aosta Valley of Beppe Caviola, a well-known Langhe winemaker and consultant, the wines enter a new dimension. They become palatable, especially because of their affordable price, even for high catering, thanks in part to the Les Chevaliers project.

With 28 percent of the region’s production, thanks to the 73 total hectares available from which to draw and select grapes, the Cave des Onze Communes started a process of change a few years ago, expanding its production offerings. First with the Coin Noble, then with the Mine and finally with Les Chevaliers, recently presented at the Castle of Aymavilles, a place closely linked to this important reality of the Vallée. This project sends a clear message to members, partners, the market and consumers: making quality is the only way forward.

With Les Chevaliers, in fact, something is achieved that was not there before, reaching the pinnacle of quality each vintage, presenting it in
numbered bottles (1300) with an iconic shape, dressed with a label showing a knight on horseback in armor, a testament to history. For the debut of this project, in the 2021 vintage, to be followed by other releases in the coming years (perhaps a Chardonnay or Pinot Noir), one could not have chosen more indigenous and red varieties than the Fumin, which ages in 500-liter wooden tonneaux for 36 months. The wine is an assemblage of plots, vinified separately, that stood out for quality. The intent is to present a version of Fumin that was not there: elegant, crisp and preservable.

Wine is history, and the Aosta Valley has so much to offer if you spend some time looking. The
connection with the territory is clearly visible in the Cooperative’s corporate logo, through the coat of arms of the noble Challant family, a dynasty originally from Savoy, which has had a long and significant influence in several regions of the Alps and particularly in the Aosta Valley. , distinguishing themselves through their alliances with other noble houses, their military efforts, and their political influence in the area. Over the centuries, the Challants accumulated wealth and power and also became noted patrons and supporters of the arts.

The castle of Aymavilles was one of the most prestigious residences of the family, which over the centuries expanded and reinforced the building, adapting it to defensive and residential needs. Today, the ancient stables are home to the newly established wine consortium of the small region on the French border.
