We are in Centocelle, a populous Roman neighborhood, constantly evolving and growing. The pizzeria is new, brightly colored in warm hues and spotlessly clean. Yes, this one from the cleaning is something that struck me: not a speck of dust, and even the bathrooms are white. To me that is a very good clue. Marco is also a great connoisseur of restaurants and a seeker of quality raw materials. Which you will then find in the very detailed menus where their suppliers and appellations of origin are also specified. In short, a commendable transparency operation.

But let us come to the pizzas that belong to the Roman category: low and crunchy. Naturally cooked in a wood-fired oven. Well leavened, very digestible and really well garnished, starting with the excellent San Marzano Dop tomato puree. Some garnishes are more straightforward, others are decidedly creative, with some combinations that might seem daring, but in the end the result is the same: you will devour them! Also very good are the fried. From cod fillets, to various supplì, all homemade and masterfully fried. Solemn praise for the olives all’ascolana, supplied to him by a small ascolano producer and finally real and tasty, with a filling worthy of the name, far removed from certain industrial products found elsewhere.

At Papanostro ‘s you will be served by polite and willing staff, well coordinated by Marco’s wife, on well-set tables, some even large and round. The outdoor veranda is also beautiful and spacious. To drink you will find some decent quality bottled beers, some on tap, as well as some bottles of wine, but On drinking more could be done; let’s give them time to grow. On the contrary, it is really varied, interesting and unexpected selection of bitters Italian artisanal bitters.
