Before trying it, intrigued by the photos-which I sometimes found to be far too abundant in “raw material”-I was a bit skeptical. But one cannot always live in a measured, calibrated, respectable and perfect way. Sometimes you also have to exaggerate, overindulge, dribble, and indulge by indulging in the kind of binge eating you’ll think about tomorrow. And so, here I am telling you about a bombshell in name and in fact: the burrata di Andria breaded with pistachios and fried with a creamy pistachio heart or the slew of appetizers such as pistachio caponata or bruschetta with pistachio cream and truffle.
