Summer salad with Asiago cheese and grilled chicken

Salad with Asiago cheese and grilled chicken is a super quick dish to prepare, suitable for these hot summer days. We pair it with Puglia Bianco Bialento 2023 Amastuola.

Ingredients for 2 persons:

100g chicken breast, 150g fresh Asiago Dop, 150g mixed salad, 100g yellow cherry tomatoes, Raspberries, Lemon juice, Edible flowers

Directions:

Cook the chicken breast on the grill or griddle at a high temperature. Once cooked, cut it into strips.

Dice the Asiago cheese and yellow cherry tomatoes in half.

In a bowl pour the salad, cheese, grilled chicken, tomatoes, and add raspberries and, if desired, edible flowers.

Season with oil, salt, pepper and lemon juice.

Puglia Bianco Bialento 2023 Amastuola

Brilliant straw yellow. Varied, almost aromatic nose with notes of yellow peach, cedar, alfalfa and boxwood with delicate floral undertones. Subtle, sharp and toned palate with a prominent savory note. Harmonious and persistent finish.

Production area: Massafra area, northwest of Taranto.

Grape varieties: 75% Malvasia, 25% Fiano; spurred cordon training, yield 70q/ha.

Production: Organic – Certified EN BIO BAC 168779

Harvest: Second decade of August, Harvesting takes place exclusively at night.

Production processes: Grapes are destemmed and sent through stainless steel piping to an air vacuum soft press, the must is transferred to steel tanks with a maximum capacity of 300 hl where fermentation takes place. Aging in medium-sized tanks equipped with micro-oxygenation devices and temperature-controlled.

Alcohol content: 12,5%

Serving temperature: 8°C.
