Asparagus, peas and gorgonzola quiche

Quiche agli asparagi, pisellini e gorgonzola
con

Spring recipe of French origin, which is well suited to Toscana Bianco Incanto Mediterraneo 2023 Tenuta Casadei.

Ingredients for 4 persons:

1 roll of puff pastry (rectangular or round depending on your baking pan), 1 bunch of asparagus, 200 g peas, 200 g gorgonzola Dop, 250 g cow’s ricotta, 100 ml fresh cream, 2 eggs, basil, mint, evo oil, salt, pepper, 1 organic lemon.

Directions:

Clean the asparagus and remove the woody part, then blanch it for a few minutes. Add peas, finish cooking and keep aside.

In a bowl combine the ricotta, Gorgonzola, eggs, cream, chopped basil and mint leaves. Mix everything together with the help of a whisk until smooth. Season with salt and pepper.

Add part of the peas and part of the chopped asparagus to the mixture.

Oil a nonstick baking dish and lay the puff pastry roll on top. Pierce the base with a fork, pour in the mixture, and level the surface. Lay the whole asparagus and remaining peas on top.

Bake in a preheated oven at 200° for 30 minutes. Let cool and garnish with lemon zest and a few mint leaves.

Toscana Bianco Incanto Mediterraneo 2022 Tenuta Casadei

Straw yellow. Fruity nose, with both tropical and yellow-fleshed fruit, and jasmine floral. Mentholated and balsamic hints. In the mouth it is medium-bodied, round, soft and very saline. Pleasant savory finish, very long.

Production area: Suvereto, in Alta Maremma, just 13 kilometers from the sea. Vineyard exposure of north/east origin, predominantly sandy soils with a good presence of clay.

Grape varieties: Sauvignon 50%, Semillon 50%. Year of vineyard planting 2000. Training system: Guyot. Density: 5,000 vines per hectare. Grape production per strain: 1Kg-1.5 kg.

Grape harvest: manual.

Production processes: de-stemmed and lightly pressed grapes are sent to 100 hl steel tanks for fermentation. Aging takes place 100% in steel for about 5 months, with contact on its own fine lees.

Alcohol content: 13 % vol.

Serving temperature: 8° C

Recommended pairings: Appetizers and appetizers, finger foods, shellfish and fried fish. Stuffed pasta and white meats.
