On the Apulian farm of Polvanera, between Acquaviva delle Fonti and Gioia del Colle, Filippo Cassano carries out a project aimed at enhancing the value of Primitivo and other native grape varieties.

Polvanera was born from a long family tradition rooted in winemaking since time immemorial.
Dug 8 meters into the limestone rock of the
Murgia, the winery is nestled in a unique landscape characterized by vineyards, dry stone walls and oak barrels.

The Historic Farm

The adjacent farmhouse dates back to 1820 and preserves the original stone walls.
The structure has a long history: it was originally used for coal production; the family that carried on the business was nicknamed by villagers the ”
polvagnor” or “black powder” in Apulian dialect, since their skin in contact with coal dust acquired this dark color. Filippo Cassano reworked the nickname of this ancient family, making it a trademark of its products.
Later the structure became a livestock farm.

After purchasing the old farmhouse, now uninhabited, Philip realized that in fact the real stone structure of the farmhouse was hidden behind the plastered walls.
Through a work of
renovation carried out by the family itself, today the farmhouse retains its original beauty.

Guided tours of the winery and vineyards can be arranged by appointment, tastings paired with local dishes, private and cultural events. Several proposals are available, from the very fast Scirocco (tasting only, without a visit to the winery) to Simple Tasting, from Light Lunch to Discover the Murgia (discovering the typical flavors of the area), from The Seasons of Polvanera (which includes a Pugliese-style lunch) to Argilla&calcare (the most comprehensive proposal, named after the soil types of the vineyards located in Acquaviva delle Fonti and includes a journey through old vintages).

The choice to produce organic wines, respecting nature and fully embracing the concept of sustainability, makes Polvanera’s production remarkable.
