100% Nebbiolo, from the top of the Pajé amphitheater. It matures about 9 years between wood and bottle. It has a deep garnet color, really surprising given its venerable age. The format probably helps, but what a surprise to note floral sensations almost 45 years after harvest, demonstrating absolutely extraordinary longevity. This is followed by sensations related to dried grass clippings, leather, goudron, noble bark. The mouth is seemingly resolved by soft, round tannins; it actually envelops the palate and caresses it with silky sensations, leaving desire for the next sip seamlessly.
Crichet Pajé’s second year of production, the bottle, an anomalous and customized 3.80-liter format, was opened on a special recent personal occasion.
