Datasheet for Tenuta Monteti’s 2020 Toscana Monteti:

DENOMINATION: Toscana IGT GRAPE VARIETIES: 50% Petit Verdot, 30% Cabernet Franc, 20% Cabernet Sauvignon. ALC/VOL: 14% VINEYARD: south-southwest exposure; altitude 140 mt; complex, stony structure on clay substrate; planting density: 6,600 vines per hectare. HARVEST: entirely by hand. YIELD/HA in 2018: 35 hl WINE-MAKING: thermo-regulated spontaneous fermentation, without addition of industrial yeasts. Each parcel in the vineyard is vinified separately, each in a dedicated vat, and also kept separate throughout aging, until the blend is composed. MACERATION: Up to 21 days depending on variety. Long lees contact to abate sulfite use. AGING: 18 months in French oak barrels (70% new medium toast and 30% second-passage). Additional 24 months of aging in bottle. No clarification or filtration.
