Looking at the lands where wine is produced from water is an activity that fascinates me so much. I do this more and more often. It happens to me every time I run along the Adige River in Verona and in the distance I can see the hills of Valpolicella. All the times in the boat, chasing the wind. in the heart of Lake Garda, I glimpse the vineyards of Lugana, Bardolino, all the way down to the vineyards of lower Trentino. It also happened to me that time that to tell about the Aglianicon I began by describing. the Cilento as seen from the sea (and here I have to thank a friend who had participated in a regatta the day before and was able to describe it to me so well).
Looking at the territories from the water makes you change your perspective and perceive some aspects that you otherwise would never have appreciated so fully. The light of Garda, the greenery of Cilento, the altitudes and slopes of Trentino, and those rock walls so narrow that you perforce realize that the wind speeds up there.

Who knows what the divers saw first when they made the resurface from the Gulf of Trieste the first bottles of Audace, the only Prosecco in the world that rests after bottling at 22 meters on the seabed for five months.
Audace is the Prosecco Doc Trieste, a tribute to the city of wind, made by
Serena Wines 1881
and Parovel in collaboration with the Francescon & Collodi agency, which designed the “Audace” brand. I got to know Luca Serena, fifth generation of the company of the same name, and the Audace project up close and personal, and I tasted the two available vintages, but before I tell you how it went, let’s make a few introductions.
Serena Wines 1881
Serena Wines 1881 is a historic brand for the production of Prosecco Doc and Docg wines. The location is in fact in Conegliano, today produces more than 28 million bottles, with exports accounting for about 53 percent of sales. The company over the years and alternating generations saw a turning point and a major growth opportunity in 1987 when it launched keg wine under the Serena brand. Innovative and practical helps establish the company among industry leaders.
It was in 2004 that the joining of Luca Serena marks another important milestone. Shortly thereafter, in 2009, the DOC and DOCG for Prosecco would be born, a fact that incentivized the desire to increase the ‘

Cradled by the sea, disheveled by the wind
What can happen to a charmat sparkling wine if we let it rest after packaging at 22 meters at the bottom of the sea Is a question to which there was no answer. Someone, however, asked for it and tried… so, with the primary (but not only) purpose of paying homage to the city of Trieste and the Audace pier facing the main square constantly disheveled by the wind, the first bottles of Audace vintage 2021 and later 2022 were dipped and fished out. The result? A Prosecco that first and foremost has refined For as long as 5 months at constant temperature and in the absence of light after packaging, guaranteeing us a balanced and ready-to-drink product. Refinement to -22 meters also significantly affected the quality of the bubble which became even finer, creamier, as if it had been returned to the wine itself.
Social and environmental sustainability
Discovering the Audace project in its uniqueness and strangeness actually proved to be an excuse to learn more about Serena Wines 1881 while also learning about its its concrete commitment to social and environmental sustainability. Varied, and commendable, opportunities for collaboration between research and education with specialized institutions and universities. At the environmental level ticks certification Equalitas. Not to be outdone are social engagement in the world of sports and solidarity projects linked to it. In fact, Serena Wines has been accompanying teams such as Treviso Basket, Prosecco DOC Imoco Volleyball, Hockey Cortina and Cesena Calcio for years.
